Darragh’s Double Chocolate Cookies

Of-so-soft and chewy cookies with plenty of chocolate in each bite. Super easy to make and versatile to make them just the way you like.

Preheat your oven to 180°C

Ingredients

  • 125g Dromona Butter
  • 100g Light brown sugar
  • 75g Caster sugar
  • 1 Egg
  • 1 tsp Vanilla essence  
  • 300g Plain flour
  • 1.5 tsp Baking powder
  • 1/2 tsp Bicarbonate of soda
  • 1/2 tsp Sea salt
  • 300 g Chocolate chips (150g Milk ,150g White)

Made for sharing:

If you fancy even more chocolate flavour, replace half of the white chocolate chips with dark chocolate to turn double into triple chocolate cookies…yum!

How It’s Done:

  1. Add butter and both sugars to a bowl and beat till creamy.

  2. Add the egg and vanilla and beat again.

  3. Add in the plain flour, baking powder, bicarbonate of soda, and salt and beat till a cookie dough is formed.

  4. Add in your chocolate chips and beat till they’re distributed well.

  5. Weigh your cookies out into eight cookie dough balls – they’re about 110-120g each.

  6. Once they’re rolled into balls, put your cookie dough in the freezer for at least 30 minutes.

  7. Take cookies out of the freezer and put onto a lined baking tray. (3/4 cookies per tray)

  8. Bake the cookies in the oven for 12-14 minutes. 

  9. Once baked, leave them to cool on the tray.
